I'm not a chef. I wouldn't even say I'm a good cook. I'm a mama just trying to make some food for her little boy and then I hope that he likes it. I don't make anything fancy--just some delish, vegetarian-friendly meals that are quick and easy to make.
I'm also not going to bore you with some long story before the recipe, so, here it is! 😉
Zucchini & Pesto Pasta //
Start by slicing one zucchini and one yellow squash.
I like to take a peeler to the outside in a few different places to make it
look prettier!
Cook them in a pan on low heat in avocado oil for about 15 minutes.
They should be translucent-like and soft.
Cook your favorite pasta.
I like to use linguini or spaghetti for this dish.
Once the veggies and pasta are cooked, combine them in the veggie pan.
I use a pair of tongs to gently combine them.
Add a heaping spoonful of your favorite pesto to the pan and gently fold it
all together.
Serve in your favorite bowl with a delish sprinkle of parmesan cheese!
