CHEESY VEGGIE BREAKFAST CASSEROLE + KITCHEN CLEANUP TIPS

Breakfast foods have a way of speaking directly to my soul. Today, I'm sharing one of my favorite (and easy!) breakfast casserole recipes! It's full of veggies and topped with cheese. What could be better?! I'm also going to be sharing some kitchen cleanup tips, plus a $$$ saving deal as well!



Cheesy Veggie Breakfast Casserole //



Ingredients // 

1 Orange Bell Pepper (diced)
1 Poblano Pepper (diced)
1/2 Onion (diced)
1/2 tsp. Minced Garlic
2 Cups of Spinach (roughly chopped)
20 Ounces of Shredded Potatoes (a little more than half a bag from the frozen section)
10 Eggs
Salt & Pepper
1 1/2 Cups Shredded Cheese (Sharp Cheddar or Pepper Jack will taste great!)
1/3 Cup Milk

How to Make // 

preheat oven to 375*


 1 // Wash and dice/chop veggies. Sauté the veggies and minced garlic in olive oil. The spinach should be fully cooked. Set aside.


2 // Spray the baking dish with cooking spray.

3 // Put the shredded potatoes in the baking dish spreading them evenly.


4 // Add the veggies on top of the shredded potatoes.


5 // Whisk 10 eggs and 1/3 Cup of Milk together. Add a pinch of salt and pepper.


6 // Pour the egg mixture over the veggies.


7 // Sprinkle your desired cheese on top.


8 // Bake in the oven uncovered for 45-50 minutes or until the cheese has melted. You should have a golden-brown crispy edge.


9 // Let sit for 15-20 minutes.


10 // Plate & Enjoy!

One // Keep your prep space clean

I am constantly putting dirty mixing bowls, spoons, and pots in the sink while I cook. I like my workspace tidy and clean, and this keeps the mess all in one place. Wipe the counters every once in awhile, too!


Two // Clean as you go

After I finished all of my prep work and my cheesy veggie breakfast casserole was baking in the oven, I washed all of the mess left in the sink. This way, you're distracted while you wait for your yummies to bake.

  4. We don't use the term of "casserole" around Europe too much. For example this looks more like a frittata to me. Anyway, everything that has cheese and veggies in it is delish!

  5. I love this breakfast casserole. This is something I can make ahead and the kids can eat before school. That way once I do clean the oven, I won't have to dirty it up (and lest be honest) leave the spills for after work cleanup. Thanks for this!

  6. I'm so bad at the "clean as you go" method of cooking - I definitely pile everything in the sink and wipe down counters, but my boyfriend would prefer if I loaded the dishwasher as I cooked I think! lol!
