You guys, I'm so excited for today's post, because not only do I get to share one of my favorite recipes, it's also my birthday! Yay! I know before there was some talk about a birthday Q&A, but I'm postponing that until next week, and I'll share some of my birthday adventures with you as well! Let's get into today's post!

Now that fall is in full swing and football Sundays are a highlight of my week, I thought that it would be super fun to come up with a few essentials for game day, including a delish vegetarian recipe that even my hubby will eat! Whether you're having a party with friends or just you and a friend, these are the essentials you need! 

Chris and I haven't been able to have a huge football party yet this season, because we've been so busy, so our parties have been a party of two, but we are definitely hoping to host a game day party super soon with tons of our close friends!


One // Your favorite team's apparel

No matter who your favorite team is, you best be representing them on game day! I'm not going to brag too much on my team, but let's just say, we're currently number one. ;) Whether it's a team shirt, jersey or just the team colors, show your spirit!

Two // A refreshing drink menu

There is nothing better than an ice cold Coca-Cola Zero™. It's definitely our go-to drink on game day and of course, our guests love it, too! Who doesn't love a refreshing Coke Zero on game day?! Whether you want to grab a variety of two liters for a large party or a couple of smaller bottles like I did for a party of two, having Coca-Cola® on the drink menu will never disappoint.

Three // A food dish that everyone will enjoy


Mmm. My mouth is already watering looking at the pictures of these Vegetarian Loaded Nachos. It's been such an easy and filling go-to recipe. It takes hardly any time to prepare, and it's a dish that's sure to impress everyone on game day. Though I am making a vegetarian nacho dish, you can feel free to substitute my meat replacements for your choice of meat. BUT, you should totally give the meat replacement a chance. It is so good!


What You'll Need

Tortilla Chips
Queso
Fresh Salsa (chopped onions, tomatoes, green pepper, cilantro)
Refried Beans
Chipotle Black Bean Crumbles (wheat meat replacement)
Black Beans
Guacamole
Mexican Corn Salsa
Sour Cream
Cilantro (to garnish)



How To Make

1. Cook the chipotle black bean crumbles (or your choice of meat) and set aside.

2. Warm up your queso in a bowl in 30 second increments in the microwave until it is hot. Warm up the refried beans until hot as well. Set these aside.


3. Create a layer of tortilla chips on a serving platter or large plate and drizzle your hot queso on top.


4. Add a layer of your hot refried beans on top of the layer of queso.


5. Sprinkle your cooked chipotle black bean crumbles next.


6. For extra protein, add your desired amount of plain black beans.


7. Add a generous amount of fresh salsa and Mexican corn salsa for your next layer.


8. Add a heaping or two of guacamole.


9. Add of dollop of sour cream on top of everything.


10. Sprinkle cilantro to garnish.

  3. This looks delicious! I am vegetarian and have not used Chipotle Black Bean Crumbles before. I do cook with Boca crumbles and they are yummy.
